1 Riverview Farms Pork Rack (available in Aldi from Dec 18)
1 tbsp olive oil
2 cloves garlic, minced
1 tbsp fresh rosemary, finely chopped (or 1 tsp dried)
1/2 tbsp fresh thyme, finely chopped (or 1/2 tsp dried)
1 tbsp Dijon mustard
1 tsp brown sugar
1/4 cup panko breadcrumbs
2 tbsp grated parmesan cheese

Pre-heat oven to 170 ˚C.

Trim the excess meat from between & around the rib bones to clean.

Pat the pork rack dry with paper towels and then rub with olive oil and salt and pepper ensuring it is evenly coated.

Add the garlic, rosemary, thyme, mustard and sugar to a small bowl and mix to combine.

Spread the mixture over the meat on the top of the rack, pressing it slightly.

In a separate bowl mix the breadcrumbs and grated parmesan.

Press the breadcrumb mixture onto the mustard-coated side of the pork, ensuring the crust sticks.

Place pork in a roasting pan and cook for 75 minutes or until the crust is golden brown and the internal temperatures reaches 70°C.

Remove from the oven and allow to rest for 10 minutes before slicing between the ribs and serving with vegetables of your choice
