1 x Riverview Farms Pork Roast
3 x Peaches
1 (200g) x Mozzarella - torn into pieces
60g Rocket
½ x Red Onion - sliced finely
100g Bread - such as sourdough
2 tbsp x Olive oil
Salt
4 tbsp x Olive oil
2 x tbsp Balsamic vinegar
Pinch x Chili flakes
Pinch x Salt

Croutons
Tear bread into bite-sized pieces, toss in 1 tbsp olive oil and pinch of salt
Bake @ 180c for 8-10 minutes until crispy - 2
Grilled Peaches
Cut the peaches into 6 wedges each, toss in 1 tbsp oil and grill for 2 minutes per side - 3
Dressing
Place all ingredients into a bowl and whisk together or shake in an old jar - 4
Assembly
Place grilled peaches, croutons, sliced onion, rocket and mozzarella into a bowl.
Add ½ the dressing and toss together
Serve next to sliced pork on serving plate and drizzle remaining dressing on top
