1 Riverview Farms Roast Pork
8 small roasting potatoes, peeled
1 bunch baby turnips, washed & trimmed
1 bunch baby carrots, scrubbed
6 shallots, peeled
60ml extra virgin olive oil
1 bunch fresh chives, finely chopped
3 Granny Smiths apples, peeled, cored & sliced

Preheat oven to 200°C.

Place potatoes and turnips into a large saucepan of water. Season with salt and bring to a boil for 15 minutes. Drain and transfer vegetables to a large oven tray and allow to cool slightly until they stop steaming.

Add carrots and shallots to the tray and drizzle with olive oil. Season with salt and pepper and roast for 30 minutes, or until golden and tender. Sprinkle with fresh chives.

Meanwhile, for the apple sauce place the apples, water and sugar in a small saucepan over medium heat. Bring to a low simmer and cook with the lid on for 15 minutes until the apples are tender. Transfer to a blender and puree until smooth.

Serve sliced roast pork with roasted vegetables and apple sauce spooned over the top.
