1 x Riverview Farms Pork Roast, chopped into bite size pieces with the crackle removed (save for later)
Oil for cooking
1 shallot, finely sliced
1 garlic clove, minced
1 capsicum, seeds removed and sliced into strips
50g pineapple, chopped into chunks
Serve with steamed jasmine rice or any rice that is deemed healthy.
Garnish with Freshly chopped spring onions

1 Massell chicken stock cube
2 tsp cornflour
80ml rice malt syrup
80ml apple cider vinegar
45ml pineapple juice
3tbsp tomato ketchup
5ml Worcestershire sauce
15ml light soy sauce
10ml oyster sauce

Place all the ingredients for the sweet and sour sauce into a jug and mix to combine.

Place your wok on high heat and add oil.

Add in the shallots and garlic followed by the capsicum and pineapple. Mix through.

Add in the pork and toss through then pour in the sauce. Allow to simmer and coat the pork for 3-5 minutes before removing from the heat and serving up on a dish.

Garnish with some freshly chopped spring onions and steamed rice of your choice.
